The Festive Table’s Secret Weapon: Quick-Cooking Greens That Taste as Good as They Look

The Festive Table’s Secret Weapon: Quick-Cooking Greens That Taste as Good as They Look

December in South Africa is synonymous with long summer days, festive gatherings and tables laden with indulgent favourites. From braais that stretch into the evening to leisurely lunches that roll on for hours, it’s a season built on celebration. But between the cheese boards, roast meats and inevitable trifle, vegetables often become an afterthought.

The good news? You don’t have to choose between festive indulgence and feeling good. The smartest festive tables are simply adding quick-cooking greens into the mix — vegetables that are fast, flavourful and flexible enough to complement rich meals without complicating the cooking.

Cruciferous vegetables like broccoli, kale and Brussels sprouts tick all the right boxes, but Tenderstem® broccoli has become a standout favourite. It cooks in minutes, delivers impressive nutritional value, and can be eaten whole from stem to floret — making it ideal for busy December kitchens.

Even better, its subtly sweet, slightly nutty flavour pairs effortlessly with bold festive ingredients like garlic, citrus, herbs, feta and pomegranate.

Three Festive Ways to Cook Tenderstem® Broccoli

South African chefs are already embracing Tenderstem® broccoli as a festive hero, proving that vegetables don’t have to play a supporting role. Here’s how to bring it confidently to the centre of your table.

Charred Tenderstem® Broccoli with Green Whipped Feta & Cranberry Salad

Serves 4–6

This vibrant dish is all about contrast — smoky, creamy, fresh and festive in one generous platter.

Ingredients

For the green whipped feta

  • 1 cup baby spinach

  • ½ cup basil

  • ¼ cup mint

  • ¼ cup dill

  • 1 green chilli

  • Zest and juice of 1 lemon

  • 1 tablespoon olive oil

  • 2 garlic cloves

  • 1½ cups crumbled feta

  • ½ cup plain yoghurt

  • Salt and pepper, to taste

For the charred broccoli

  • 200g Tenderstem® broccoli

  • 1 tablespoon olive oil

  • 2 teaspoons paprika

  • Salt and pepper, to taste

For the salad

  • 1 cup wild rocket

  • 1 Granny Smith apple, thinly sliced

  • ½ cup dried cranberries

  • ½ cup spring onion, thinly sliced

  • Zest and juice of 1 lemon

Method

Place all the whipped feta ingredients into a blender and blend until smooth and vibrant green. Taste and adjust seasoning, then set aside.

In a large bowl, toss the Tenderstem® broccoli with olive oil, paprika, salt and pepper. Heat a pan until very hot and char the broccoli on all sides until lightly blackened but still tender.

To assemble, spread a generous layer of green whipped feta onto a serving platter. Scatter over the rocket, charred broccoli and apple slices. Finish with cranberries, spring onion, lemon juice and zest. Serve immediately as a show-stopping festive side.

Sautéed Tenderstem® Broccoli with Garlic & Chilli Oil

Simple, bold and incredibly moreish, this dish proves that minimal effort can still deliver maximum flavour.

Ingredients

  • 400g Tenderstem® broccoli

  • ½ teaspoon salt

  • 1 teaspoon vegetable oil

  • Juice of ½ lemon

For the garlic & chilli oil

  • 1 garlic clove, peeled

  • ½ teaspoon chilli flakes

  • 2 tablespoons olive oil

  • Juice of ½ lemon

To serve

  • ½ cucumber, shaved into ribbons

  • Crumbled feta

  • Pomegranate seeds

Method

Bring a large pot of salted water to the boil and blanch the Tenderstem® broccoli for 1 minute. Remove and allow it to dry on a plate lined with paper towel.

Heat the olive oil gently in a small pan and add the garlic clove. Swirl it in the oil for 2–3 minutes to infuse, then add the chilli flakes and remove from heat.

In a separate hot pan, sauté the broccoli with a teaspoon of oil for 1–2 minutes until piping hot. Add the infused oil, season with salt and lemon juice, and toss well.

Serve over shaved cucumber, topped with crumbled feta and pomegranate seeds for freshness and crunch.

Spiced Middle Eastern Tenderstem® Broccoli & Chickpea Pilaf

Serves 4 as a main

Hearty yet balanced, this dish transforms Tenderstem® broccoli into a festive main that still feels light and nourishing.

Ingredients

For the broccoli

  • 400g Tenderstem® broccoli

  • 2 tablespoons olive oil

  • 1 teaspoon ground cumin

  • ½ teaspoon smoked paprika

  • ¼ teaspoon ground cinnamon

  • Sea salt and black pepper

For the pilaf

  • 2 tablespoons olive oil or butter

  • 1 onion, finely chopped

  • 2 garlic cloves, minced

  • 1 teaspoon ground cumin

  • ½ teaspoon ground coriander

  • 1 cup basmati rice, rinsed

  • 2 cups vegetable stock

  • 1 × 400g tin chickpeas, drained and rinsed

  • ¼ cup raisins or sultanas

  • Salt and pepper, to taste

To garnish

  • 2 tablespoons pomegranate molasses

  • ½ cup pomegranate seeds

  • ¼ cup toasted almonds or pistachios

  • Fresh parsley or coriander

Method

Heat olive oil or butter in a saucepan and cook the onion until soft and golden. Add garlic, cumin and coriander and cook briefly until fragrant. Stir in the rice, chickpeas, raisins and stock. Bring to the boil, then cover and simmer for 12–15 minutes until the rice is tender. Fluff and season.

Toss the Tenderstem® broccoli with olive oil, cumin, paprika, cinnamon, salt and pepper. Char-grill on a hot grill pan or roast at 220°C for 8–10 minutes until lightly charred but still vibrant green.

Spread the pilaf onto a serving platter, arrange the broccoli on top, drizzle with pomegranate molasses and finish with pomegranate seeds, nuts and fresh herbs.

A Smarter Way to Feast

Quick-cooking greens don’t just save time — they make festive cooking more enjoyable. They’re forgiving, flavour-forward and leave you feeling energised rather than sluggish. They also help reduce food waste, thanks to vegetables that can be eaten whole.

So as you plan your festive menu this season, remember: you can have your pudding and eat your greens too. With vegetables that work with your schedule, not against it, celebration and balance can sit comfortably on the same plate.

And that might just be the best festive upgrade of all.
